Instructions

  1. Warm milk by microwaving for 40-45 seconds. Transfer to a bowl and sprinkle yeast on top. Add in sugar, egg, egg yolk, and melted butter. Mix until well combined. Stir in flour and salt until a dough begins to form.
  2. Knead dough in a mixer on medium for 8 minutes or by hand on a well-floured surface for 8-10 minutes. Add more flour (up to 2 tablespoons) if dough is sticking to kneading surface.
  3. Transfer dough to a well-oiled bowl and cover with plastic wrap. Allow to rise until doubled (1 hr to 2 hours depending on warmth and humidity).
  4. After the dough has doubled, transfer to a well-floured surface and roll out into a 14x9 rectangle. Spread butter evenly, leaving a small margin at the far, 9 in side of the dough.
  5. Combine the brown sugar and cinnamon in a small bowl then sprinkle dough with the sugar mixture. Rub the brown sugar mixture into the butter to help it combine and carmelize in the oven.
  6. Tightly roll the dough up starting on the 9 in side, pressing to seal. You want to roll it up so that you get as many alternating cinnamon sugar/dough layers as possible.
  7. Use a serrated bread knife to cut 1 in rounds and place into well-oiled baking dish. The ends may not be as filled or pretty so you may choose to dispose of them. They are still delicious, so I typically bake them and use them as sample bites.
  8. Cover with plastic wrap and place in the fridge overnight.
  9. Combine all frosting ingredients in a medium bowl and set aside until the cinnamon rolls are baked. I almost always make 1.5 or 2x this recipe because we love frosting :)
  10. In the morning, take out the cinnamon rolls from the fridge 45 minutes before baking. Bake at 350 degrees F for 20-25 minutes or until just golden brown.

  11. Allow to cool for 10 minutes before frosting and enjoying. Store at room temperature for up to three days. Microwave for 15 seconds for gooey centers.
