Hi! I’m Elizabeth.

I live in Charlotte, NC with my husband and our golden retriever, where we take full advantage of the beautiful weather, nearby hiking and biking trails, and the local farmers market for fresh, seasonal ingredients.

I hope you enjoy the recipes gathered here as much as we have over the past few years. Many are inspired by standout flavors and textures I’ve discovered while traveling with family and friends — and many more were born from pure experimentation as I’ve tried to broaden my baking horizons.

I’ve always loved learning — first as a mechanical engineering student, then as a data analytics manager, and now as a baker. Eat With Elizabeth is where all of those worlds meet: a place to explore the why behind every recipe and technique as I continue to grow.

From laminated doughs to vegan brownies, each recipe blends creativity with curiosity — and often, a little data for good measure. Through “Behind the Bake” recipe sections, I share the science and reasoning behind the process: what makes a macaron rise, how temperature shapes caramelization, or how a recipe evolved throughout history. My goal is to make the learning feel fun and effortless — inspired by the approachable curiosity of Alton Brown’s Good Eats and Alie Ward’s Ologies.

Many of my friends and family have gluten intolerances or other food allergies, and I’ve come to believe those differences don’t limit what we can make — they inspire it.

Exploring new ingredients has become one of my favorite parts of baking. Learning how almond flour behaves differently from wheat, or how aquafaba can stand in for egg whites, has opened up a whole new world of creativity. Great food can be inclusive, inventive, and completely delicious — no matter your dietary needs or preferences.

Every recipe tells a story — but it doesn’t need to take a thousand words to get there. I like to start each one with a short overview to help you get a feel for its rhythm: the flavors, the effort, and the kind of day it’s made for. Think of it as a quick primer — a way to preview the vibe of the recipe before you dive in.
