This super simple meal comes together in one pan in less than 30 minutes including prep.
Cajun White Bean and Sausage Skillet

Cut sausage links into ¼ inch pieces.

Heat oil in a large skillet over medium heat. Add sausage and cook for 3-4 minutes until sausage begins to brown.

Add garlic and cook for 1 minute, until just golden and fragrant.

Add in the tomatoes, chicken broth, beans, onion powder, cajun seasoning, bay leaf, and crushed red pepper.

Bring to a boil and then reduce heat to low and allow to simmer uncovered for about 15 minutes, stirring occasionally.

Remove bay leaf and taste - add salt and pepper if desired. (Many cajun seasoning blends will have plenty of salt so you probably won't need much, if any.)

In two or three batches wilt in the baby spinach. If nearly all of the liquid has reduced feel free to add in ½ c water or extra chicken broth. Allow spinach to cook down for 2-3 minutes. Enjoy!
