For incredible potatoes every time, the key is to boil before baking so that they take on that fluffy inside texture while being super crispy on the outside.
In a large pot of water, place sliced potatoes with 1 tablespoon of salt. Turn burner to medium high heat and once at a boil, boil for additional 5 minutes.
In the meantime, preheat the oven to 450F and place a sheet pan in the oven.
Once the potatoes are done boiling, drain and return to pot. Toss with olive oil and remaining tsp of salt. At this point, add any additional seasoning such as garlic powder, paprika, or chili powder.
Move potatoes to sheet pan and bake for 40 minutes, rotating halfway through. Keep an eye as depending on your oven these may brown sooner than 40 minutes. These can also be made in an air fryer at 400F for 20 minutes or until browned.
Remove and enjoy with Ketchup, aioli, or any other sauces of your choice!
