Mini McGriddle Muffins

The breakfast classic at McDonalds combines sweet and savory with sausage, cheese, and syrup in a pancake sandwich. These muffins take all the best parts of that meal and turn it into a handheld snack.

Ingredients
  • 2 cups pancake mix (I like to use higher protein Kodiak brand)
  • 1 1/2 cups water
  • 1 lb sausage
  • 1 cups cheddar cheese (shredded)
  • 1/4 cup maple syrup (plus more for dipping :))
Instructions
  1. Brown breakfast sausage in a skillet over medium high heat. Drain grease well and set aside.
  2. Mix pancake mix with water according to the directions on the box. Stir in cooked sausage, cheese, and syrup.
  3. Pour into a greased mini muffin pan. Bake at 400 degrees for 12-15 minutes.
  4. This made 24 mini pancake muffins. Dip in more syrup and enjoy!
