  1. Preheat the oven to 400 F. 

  1. Prepare the sheet pan by spraying with oil and lining with parchment paper. Pour the egg whites to desired thickness then evenly distributed chopped spinach and feta crumbles. Season with salt and pepper. Bake until set through, about 15 minutes.

  1. Once the eggs are cooked through, let cool for 10 minutes before cutting in the shorter pan direction into 4 pieces. Put each piece in the middle of a lavash bread and wrap around the egg. Cut each lavash bread in half to get 8 wraps.

  1. You can choose to heat a pan and heat each side of the lavash bread until lightly toasted. Enjoy or wrap in parchment paper and freeze. This reheats beautifully in the air fryer. It will not crisp up re-heating in the microwave so I highly recommend using an air fryer for a few minutes if you have one.
