Preheat oven to 410°F with a rack in the top third. Line two baking sheets with parchment paper.
In a large mixing bowl, cream together the 1 cup of cold butter, 1 cup of brown sugar, and 1/2 cup of granulated sugar for 4 min until fluffy. Add eggs and vanilla and mix until combined.
Separately, whisk together the flours, cornstarch, baking soda, and salt.
Add dry ingredients to wet ingredients and mix until just combined. Fold in the chocolate chips.
Weigh out even portions and shape into balls on the baking sheets. I recommend 5 oz for a large cookie. You could make these anywhere from 3 oz to 6 oz and adjust baking time by 1-2 min less or more for each oz smaller or larger.

Chill dough balls for 15-30 minutes, then bake one sheet at a time for 13 minutes or until golden brown. Let set up for at least 10 minutes after removing from the oven before moving to a cooling rack or eating.
