Ingredients
    Salad
  • 1.5 lb New York Strip
  • 1 cucumber
  • 1 pint cherry tomatoes
  • 1/2 avocado
  • 4 oz arugula or spring mix
  • Dressing
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 tsp maple syrup
  • 2 tsp shallot (minced)
  • 2 tsp sherry vinegar (optional)
  • 3/4 tsp salt
  • 1/2 tsp pepper
Instructions
    Dry brine the steak
  1. 8-10 hours prior to making your meal, cover the steak liberally in salt (1 tsp per side) and leave to sit in the fridge on a wire rack above a sheet pan.

  2. Prepare the Steak
  3. Cook the steak

Preheat the oven to 250F. Once heated, cook the steak for 30-40 min or until the internal temperature reaches 118F. During this time, prepare the dressing and rest of the salad.

  4. Rest the steak

Rest the steak for 10 minutes, covered with aluminum foil. With 3 minutes remaining, preheat a cast iron skillet on high heat.

  5. Sear the steak

Cook on each side for 45 seconds then remove and rest for an additional 10 minutes, covered. Slice diagonally and serve with salad once prepared.

  6. Create the salad
  7. Make the dressing

Combine all dressing ingredients in a jar or tupperware, then shake to combine.

  8. Prepare the salad

Chop all salad ingredients into small pieces. Pour about half the dressing onto the lettuce and mix to coat greens. Add in remaining salad ingredients and combine. Top with steak, additional dressing if desired, and enjoy!
