Growing up banana bread and these oatmeal butterscotch cookies were staple treats thanks to my mom. The banana bread warm out of the oven with a nice smear of butter always hit the spot after a busy day of school and after school sports. This is my version of the delicious banana bread. Those same fond memories come rushing back every time I smell this delicious treat baking in my own oven.

Preheat oven to 350F. Grease a 9-inch loaf pan well or line with parchment paper.
Cream sugar and butter in a large bowl. Add eggs one at a time and stir until blended. Add bananas, greek yogurt, and vanilla, stirring until just combined (at this point the mixture may look broken).
Combine flour, baking soda, and salt in a separate bowl, mixing very well to avoid biting into bitter pockets. Add the flour mixture to the wet ingredients, stirring until just moistened, then add chocolate if using. Pour into prepared pan.
Cool for 5 minutes, release the sides of the pan, then remove to a cooling rack. Let loaf cool completely before slicing otherwise it will fall apart. Enjoy warmed with lots of butter!
